1. Maple syrup

1.1 Regulatory context

Maple syrup is included in Volume 7 of the Canadian Classification Standards, which is incorporated by reference in the Canadian Food Safety Regulations (CFSR) . There are two categories of maple syrup that are not imported:

  • "Canada, category A", which must meet the following requirements: (a) soluble solids ≥ 66% and ≤ 68.9% (refractometer or densimeter at 20°C); (b) absence of fermentation; (c) clear and uniform in color and free of sediment and turbidity; (d) determined color class (see §...
