1.1 Product description

Dulce de leche (DL) is a smooth, sweet spread that varies in color from beige to brown, with the standard being around brown (figure 1 ) . It can be made mainly from cow's milk, and more rarely from goat's or buffalo's milk. As its name suggests, in French only, it's a jam - a peculiar appellation, however, insofar as the product's base is not fruity, but milky.
