1.1 Product description

Starch is a carbohydrate, a homopolymer of D-Glucose, extracted from various plant raw materials (table 1 ). The D-glucose units are linked mainly by α(1,4) bonds, and to a lesser extent by α(1,6) bonds in the case of amylopectin. The term "starch" is used when derived from cereals: corn, wheat, rice, while the term "starch" is used for tuber starches: potato, manioc (figure 1 ). In plants, starch takes the form of small granules, insoluble in cold water, whose size (between 2 and 100 microns) and shape vary according to origin
