2. Protein concentrates and isolates
Protein ingredients derived from yellow pea belong to the category of Vegetable Protein Substances (VPS) defined by the Codex Alimentarius . VPMs are food products obtained from oilseeds, legumes or cereals by reducing or eliminating some of the main non-protein constituents (water, oil, starch, other carbohydrates), so as to obtain a protein content (N × 6.25) of 40% or more. Protein content is calculated on a dry weight basis, excluding vitamins, minerals, amino acids and any food additives.
