Pea proteins are used in the formulation of numerous food products in the context of increasingly specialized diets (for athletes, vegetarians, the elderly, etc.) and the partial or total replacement of animal proteins.

From a nutritional point of view, isolated pea proteins have recognized satiety-enhancing effects and can be used in diets to limit weight gain, while maintaining muscle mass. Their amino acid profile is interesting, as pea proteins are rich in leucine, which promotes muscle synthesis, arginine and lysine for bone growth and for strengthening collagen structures .
