Since its discovery, coffee has been prepared in many ways: with the whole fruit, fresh or dried, with the hull, with the pulp, with the beans more or less processed, boiled, roasted, infused, percolated...

  • Even today, coffee preparation techniques and equipment (figure 29 ) vary according to country and custom, the main ones being :

    • Turkish" coffee is an elaborate blend of finely ground coffee, sugar and water. The mixture is boiled in a long-handled coffee pot, then left to rest before consumption (figure 30 a);
