Cyclodextrins are cyclic oligosaccharides obtained by the enzymatic degradation of starch. They possess a hydrophobic cavity that allows them to encapsulate other compounds. The formation of such inclusion complexes, also called "host/guest complexes" is likely to modify the physical, chemical and/or biological characteristics of the guest molecule. This article describes the main applications of cyclodextrin/substrate inclusion complexes through several examples published in the literature. All industrial fields are concerned, from pharmaceuticals to cosmetics, through chromatography, food, medical, biotechnology or catalysis.

INTRODUCTION
Although discovered in 1891, cyclodextrins are still of interest from both a fundamental and an industrial point of view. Cyclodextrins are synthetic substances derived from the enzymatic degradation of starch, one of our planet's most important polysaccharides. They feature a hydrophobic cavity within their structure, enabling them to encapsulate various substances. Many developments are based on the concept of complexes formed by association between the host (molecular receptor) and the guest (target molecule, ionic entity). The formation of such complexes is likely to modify and/or enhance the physical, chemical and/or biological characteristics of the enclosed substance. Host/guest chemistry has become an essential branch of molecular recognition.
Thanks to this encapsulation property, cyclodextrins are an important class of molecular receptors used, for example, in the delivery of bioactive compounds, substrate detection and molecular recognition phenomena
The aim of this article is firstly to present cyclodextrin molecules and their properties, and secondly to show the interest in using these molecules in various applications.
