Vinegars belong to a large family of products, all of which are derived from a plant base with varying levels of carbohydrate content. Examples include white wine vinegar (cristal), red wine vinegar, cider vinegar, rice vinegar, malt vinegar, beer vinegar, beet vinegar, Spanish sherry PDO – the only vinegar in the world to contain alcohol (< 3% vol.).) – balsamic vinegars from Modena, with or without PGI, and finally, the world-renowned traditional balsamic vinegars from Modena or Reggia Emilia PDO, extremely rare, truly exceptional and very expensive products, what some call "black gold".

Vinegar production technologies vary widely, with approaches ranging from the basic, as in the case of wine vinegars, to the intermediate, with limited constraints, as in the case of PGI vinegars, to the almost secular, with very strict specifications and respect for tradition,...
