Man has always wanted to appreciate his food according to subjective criteria, depending on his lifestyle or health. Indeed, among the various foods available, we intend to consume those that suit us. This ability to choose and know how to choose enables him to establish a hierarchy among the foodstuffs that are consumed, accepted, preferred, desired and useful for his health.
