Food systems, i.e. the way in which humans organize themselves in space and time to obtain and consume their food , must make the transition to greater sustainability. The main sustainability issues to be addressed are summarized in figure 1 , which specifies which stage of the chain, from production to consumption, these issues relate to in particular.
