The origins of cream cheese can be traced back to 1872, when William Lawrence, a cheesemaker in Chester (New York State, USA) made a cream cheese from unripened lactic curd, based on the principle used to make Neufchâtel cheese (which is ripened) . A few years later, in 1880, New York cheese wholesaler Alvah L. Reynolds created the Philadelphia ® brand to market cream cheese. In 1903, he sold his brand to Phenix Cheese Company, which merged with Kraft Cheese Company in 1928...
