3.1 Storage and degermination of production batches

3.1.1 Malt cooling

After the kilning process, the malt is cooled. To do this, a stream of fresh air (air from the outside) flows through it until the temperature of the malt is below 40°C, a temperature which ensures good preservation during storage (no qualitative changes in the malt, no risk of self-heating).
