5. Cooking islands installed in catering areas
5.1 Equipment layout rules (GC 15)
As soon as the total useful power of cooking or reheating appliances installed in a catering room exceeds 20 kW, these appliances must be placed in cooking islands.
A cooking island consists of an enclosure to which the public has no access.
Service personnel must be present during operation.
Appliances must not be left free to use.
Only combustible gas and electrical energy are permitted to power appliances.
