1. European regulatory requirements for traceability and HACCP
Both systems, traceability and HACCP, meet specific European regulatory requirements, as set out in :
EC regulation 178/2002 for traceability;
EC regulation 852/2004 for the HACCP method.
It is therefore worthwhile refocusing these systems in a more global context, that of European regulations, before delving into methodological issues and their application in agri-food businesses.
