3. Business organization

Before presenting the different forms of activity representation (processes, procedures, operating modes), we present a general outline of the type of organization usually encountered in food processing industries.

Figure 1 describes a product's journey from upstream to the customer-processor.

General processes describe activities, exchange flows with inputs and outputs, and interactions between these activities. These exchange flows include information flows: we are at the information system level. In describing a company's internal processes and organization, we distinguish three stages, detailed in the following (see § 3.1.1
