5. Preventive treatments
As curative treatments for wine effluent odors are generally unsuitable, preventive treatments are to be preferred, both for the more elegant concept of not producing the polluting compounds rather than eliminating them, and from a technical point of view, for high-performance solutions to combat odor nuisance.
Preventive treatment consists of preventing the formation of malodorous compounds in effluents by acting on odor-producing microbial processes. Two methods can be considered:
orientation of the degradation of constituents into odourless compounds, by addition of nitrate ;
inhibition of micro-organism development by antimicrobial agents.
