Odor compounds are classified into four families:

  • sulfur compounds: hydrogen sulfide, mercaptans, sulfides, disulfides... ;

  • nitrogen compounds: ammonia, amines, heterocycles (indole, scatole) ;

  • oxygenated compounds: organic acids (volatile fatty acids), aldehydes, ketones, alcohols, esters ;

  • other molecules: hydrocarbons (aliphatic, cyclic)...
