4. Drying intensification – Application

In order to intensify the overall hot-air drying operation, a few modifications must be made to the product itself and/or to the technology.

4.1 1st intensification: external transfers

Heat and matter can be transferred between the die and its surroundings in opposite directions. Heat can be transferred by contact, convection and/or radiation, or supplied by microwaves. Air drying induces perfectly correlated heat and material transfer processes. Heat flow depends on the temperature and speed of the surrounding medium (air).

We can see that, to intensify the flow of water vapour from the exchange surface to the outside, we need to increase the speed and temperature of the air flow and reduce its humidity....
