Surimi is produced in two stages:
first transformation, which leads to the production of surimi base from fish co-products. It consists in recovering a protein-rich pulp through mechanical separation, washing and refining. This initial processing is carried out at sea or on land, after unloading the fish, generally on the same day as filleting, or within 24 hours;
second transformation, which produces surimi (a fish-based preparation) from surimi base.
