2. Fast methods

These methods cover a very wide range of systems, including miniaturized biochemical identification tests, physico-chemical tests that measure bacterial metabolites, and immunological or genetic tests that are sometimes fully automated .

2.1 Miniaturized biochemical tests

Bacteria isolated from food are generally identified by their biochemical characteristics. Replacing Petri dishes with small cups has saved media and simplified testing. The use of concentrated inoculums has also reduced incubation times.
