4. Consumer perception and behavior toward plant-based products
Pulses have nutritional and environmental benefits that make them particularly interesting ingredients for plant-based alternatives to dairy products. Yet consumption of legume-based products is particularly low in France, even though consumers are aware of these advantages . Addressing the question of plant-based alternatives from the consumer's point of view is therefore essential to better understand the obstacles to their consumption, and to guide the development of new products.
