enriched milk

Fresh milk supplemented with milk proteins. The aim of protein standardization is to improve the consistency, productivity and yields of cheese production.

reconstituted milk

Milk obtained by mixing water and fatty or lean dairy powders. The dairy powders used to reconstitute milk are most often skimmed or whole milk powder.

recombined milk

Milk obtained by blending water, milk powders (sources of protein, lactose and minerals) and milk fat.

cheese without separation

Product obtained after heat treatment and coagulation of a mixture including powdered dairy ingredients, milk fat and water. After coagulation, the unseparated cheese is molded directly and therefore does not undergo whey draining....
