2. Carbohydrates, nutrition and health
In France, the majority of carbohydrates are ingested in the form of starch (bread, pasta, cereals), i.e. 50 to 60% of carbohydrates, for 200 to 300 g per day, and sucrose (table sugar), i.e. 30 to 40% of carbohydrates, for 80 to 100 g per day. To this must be added a small amount of lactose (milk and certain dairy products), fructose (fruit and fruit derivatives, honey), and fibers such as cellulose, hemicellulose and pectins .
