Although the presence and risk of biofilms in the food industry has long been known, few studies have focused on the composition of these reservoirs of micro-organisms and on equipment surfaces. This lack of knowledge is an obstacle to prevention and the necessary corrective measures.
2.1 Bacterial biofilms in the meat industry
Every surface in the production environment, from the slaughterhouse to the packaging station for consumer portions in the cutting plant, is colonized by micro-organisms, and in particular by bacterial flora specific and complex to the meat industry.
