3. Implementation

  • Step 1 – Grape harvest

    When it comes to harvesting, there are two options: hand-picking or using a mechanical harvester, the latter accounting for 70% of the volume processed.

  • Step 2 – Sorting the harvest

    When the harvest arrives at the winery, the grapes are sorted by a variety of methods, including manual sorting on vibrating tables or belts, automatic sorters with densimetric baths, high-flow air knives, rollers or optical sorters, the latter based on the color and shape of the grape bunches.

  • Stage 3 – Destemming

    This operation consists of separating (eliminating) the woody stalks that support the grapes and contain tannins, astringent compounds often considered undesirable....
