1. Definition and evolution of sensory evaluation

1.1 Definition

The sensory criteria for products include visual, olfactory, tactile, aural and gustatory sensations. To evaluate them, an analytical approach is essential to understand and modify the stimuli that impact the sensory properties of products . These are the sensory analysis methods more commonly referred to today as sensory evaluation.

Standard NF ISO 5492 defines sensory analysis as "the examination of the organoleptic properties of a product by the sense organs".
