3. Conclusion
The properties of emulsions are not independent: to predict their stability, it is important to know not only their type and composition, which includes the choice of emulsifier, but also to measure their particle size and viscosity. In principle, stability is enhanced by droplet fineness, low polydispersity, high viscosity and the use of solid particles adsorbing at the water/oil interface. The first two criteria are highly dependent on the emulsification process.
