4.1 Multiple emulsions

Multiple emulsions are emulsions in which the dispersed phase is itself made up of drops (these drops can contain other drops up to an order "n"). Thus, a multiple emulsion of order 2 is a so-called double emulsion, which can be either an E 1 /H/E 2 emulsion if the continuous phase is water or an H 1 /E/H 2 emulsion if the continuous phase is oil. The double emulsion E 1 /H/E 2 can also be seen as two aqueous phases separated by an oily intermediate phase, a kind of "membrane" that can be used...
