5.1.1 Xanthan gum

Date fruit by-products are known to be useful for the production of high value-added components such as xanthan gum, a polymer consisting of D-glucose, D-mannose and D-glucuronic acid, in the molar proportions of 2, 2, 1, partially acetylated and pyruvylated. It is classified as a texturizing agent, in the category of additives and not ingredients, as it is not assimilable by humans. It has been approved for use in the food industry since 1969 by the Food and Drug Administration (USA)...
