1. Molecules and assemblies
Three families of molecules are of interest in green chemis-try :
oses and oligosaccharides (sugars), starch, lipids and proteins present in storage tissue;
lignin and polysaccharides represent supporting tissue with a focus on the lignified secondary wall, which can be reduced to lignocellulose;
secondary metabolites.
