3.1 Choice of extraction mode
The beet from which the sugar is extracted is made up of a multitude of cells (figure 5 a ) consisting of :
a cell wall (cellulose, hemicellulose and pectic products: pectic acid, protopectin, pectinates, pectates...);
an ectoplasm (a semi-permeable membrane that allows practically only water to pass through, unlike the cellulose wall, which is totally permeable);
