    • Block cheeses (from 1 to 10 kg) are usually vacuum-packed, or grated and bagged in a modified atmosphere (70% nitrogen + 30% CO 2 ). Packing is also carried out after freezing blocks or cossettes. Prolonged storage in negative cold significantly alters the functional properties of Pizza Cheese .
