This article highlights the innovative nature of NMR spectroscopy and imaging methods for studying salt content, mobility and localization in foods. In addition to the diversity of information provided, the non-destructive nature of NMR is a decisive advantage for analyzing the evolution of the same sample over time.

However, the NMR technique is relatively insensitive, since the signal results from the difference between the populations of nuclei occupying the different energy levels. This difference is very small compared to the number of nuclei present in the sample. At room temperature, only one nucleus per 100,000 participates in the signal.
