4.1 Nutritional values and compositions

Chocolate mousses, which make up the largest part of the milk mousse universe, vary considerably in terms of both chocolate and/or cocoa content and fat content, with consequences for Nutri-Score classification. Looking at the table 1 , a premium chocolate mousse made with four ingredients and no additives is graded E, while a 1 er prix mousse containing eight times less chocolate and three times more ingredients, including three additives, is graded C.
