2. Chemical composition of milk fat
Cow's milk fat is a complex mixture due to the diversity of its molecules. It is essentially composed of triglycerides, with diglycerides, complex lipids and fat-soluble unsaponifiable substances as secondary components (table 3 ). Its main physico-chemical constants are given in table 4 .
2.1 Fat content of different milks
Milk fat content varies according to a number of factors, including species, breed, animal health, season, diet, lactation stage and number, and milking time (morning or evening) (table 5 ).
