2. Legislation and quality standards
Bacteriological checks must be carried out as soon as materials are received, and samples are taken at every stage of production. Just before shipment, a complete sanitary inspection of the finished product enables it to be marketed.
The European Gelatin Manufacturers' Association (GME) has developed "Standardised methods for the testing of edible gelatin" to ensure that gelatin is tested in the same way by all European gelatin producers and consumers, and to guarantee compatibility of results. This compilation of methods includes all the parameters required by European legislation, as well as test methods for physical properties such as "bloom" gelling power, viscosity, color and clarity.
