Overview
ABSTRACT
The spray-drying process consists in obtaining a solid divided by the placing in contact of a warm gas and a fluid dispersed under the form of fine droplets. Playing on operation parameters allows for controlling various end of product properties, such as size, the form of solid particles or else its solubility due to porosity. This article focuses on the technological aspect: pulverization, gas dispersion, recovery of the solid and process safety. Concrete examples based on industrial applications are also provided.

INTRODUCTION
The spray-drying process is used for a wide range of products in the agro-industrial, pharmaceutical and cosmetics sectors, as well as for the preparation of pigments and mineral fillers. This operation consists in obtaining a divided solid by bringing a hot gas into contact with a fluid dispersed in the form of fine droplets. By adjusting the operating parameters, it is possible to control various properties of the finished product, such as the size and shape of the solid particles, or its solubility via the presence of porosity.
