5. Characteristic temperatures

In a retail refrigeration unit, there are different temperature characteristics.

  • Application temperature

    Technically and commercially, furniture is characterized by its application temperature t i . This temperature corresponds roughly to the average temperature range encountered in the air of the useful loading volume.

    By analogy with any cooled enclosure, it is assumed that this corresponds approximately to the average temperature of the foodstuffs displayed and stored. The definition and choice of a refrigeration unit providing a certain application temperature t i depends on the nature of the product being exposed and preserved by cold, and on the regulations in force.
