okadaic acid
Marine toxin produced by certain micro-organisms (dinoflagellates). In order to feed, shellfish filter the water and can ingest this toxin. Consumption of seafood contaminated by this acid can cause gastrointestinal disorders in humans. As the proliferation of okadaic acid-producing micro-algae cannot be controlled, it is impossible to prevent shellfish contamination. To prevent consumer exposure to this toxin, production areas are constantly monitored.
