1. Introduction to sensory analysis

Today, sensory analysis has two main focuses :

  • a "sensations" axis;

  • a "preferences" axis.

These two axes are complementary, and their joint use, leading to "preference mapping", is of great interest when it comes to bringing new products to market.

  • The "sensations" axis essentially involves specialists or experts. By definition, it excludes any expression of preference and is concerned with the analytical description of products.
