2. Manufacturing processes for the main types of tea

2.1 Different types of tea

The different types of tea obtained according to the manufacturing stages are shown in figure 3 :

  • white tea: this tea contains only the bud or first leaf, and undergoes the least post-harvest processing. The buds are often covered by down, which gives the tea its white color. The transformation process is very simple: the leaves are placed in the shade for the withering stage, then dried;

  • green tea: to prevent fermentation, the leaves are brought to a high temperature (either dry heat, i.e. stirred in a large wok over a fire, or moist heat, i.e. placed over steam baths, the...
