3. Conclusion

In this dossier, we present how it is possible to characterize the morphology of emulsions using differential scanning calorimetry (or DSC). Emulsions are extremely complex fluids whose behavior is highly sensitive to conditions of preparation, storage, transport, thermal cycles and so on. It would be illusory to hope to characterize them using a single technique. However, it is clear that the DSC technique can simultaneously provide a great deal of information on an undiluted sample for which conventional characterization techniques are not applicable.
