2. Application examples

In this chapter, we will show concrete examples of the use of DSC to characterize different types of emulsions, stability, mass transfer and particle size. Some examples are taken from the reference [19] , which is a bibliographical review of various examples of DSC characterization of emulsions from the literature, covering all fields of application (agri-food, pharmaceuticals, cosmetics, petroleum, etc.).

2.1 Stability of different types of emulsion

The different types of emulsion likely to be encountered are: o/w emulsion, w/o emulsion, mixed o/w or w/o emulsion, and multiple o/w/o or o/w/o emulsion.
