3.1 Presentation

  • Fresh yeast is sold :

    • in bulk, in the form of cream with 18 ± 2% dry matter ;

    • in bulk, in the form of crumbled yeast, packaged in 25 kg polyethylene-lined, multi-layer paper bags, sealed to ensure watertightness;

    • in block or loaf form. The usual packaging is a 10 kg carton, containing four bundles of five 500 g packs each. Each bundle is wrapped in cellophane for optimum product preservation. 20-40 g cubes are also available, for household use.
