9. Conclusion

In this article, we have presented some basic facts about cold storage using latent heat. We've given the basics on liquid-solid transformations for both pure bodies and binary solutions. The study of the thermodynamic equilibrium always present on reheating, i.e. during destorage, was presented. But we have also described the phenomenon of supercooling, often observed on cooling, i.e. during storage. This is a more or less significant delay in crystallization. Crystallization then obeys the probabilistic laws of supercooling failures, leading to specific transformation kinetics.

We have briefly described the various systems used: ice trays, encapsulated nodules and ice slurries, outlining their advantages and disadvantages, as well as their areas of application. The first two are already widely used, and would merit further, more detailed monographs. On the other...
