3. Bacteriocins: production methods

Bacteriocins are naturally secreted by bacteria to control their environment. While the genetic nature of bacteriocins offers significant possibilities in terms of applications, this has long been a technological barrier to the domestication of these natural "objects".

Their production for application has come up against the inherent complexities of the biotechnology field, i.e. scale-up and standardization. Traditionally, these bacteriocins are produced from bacterial strains isolated from the environment or from industrial strains adapted in the laboratory, a process which requires an extensive optimization phase (figure 6 b). This phase includes not only production itself, but also purification. These two crucial stages can determine the economic viability of bacteriocins...
