7. FMS equipment
A wide range of FMS equipment is available, from simple bakers' mixers to industrial fermenters for sake or soy sauce production in the Far East, the largest of which can handle 400 m 3 of substrate per batch.
This wide range of equipment is a necessity, as solid-state fermentation culture media are heterogeneous and have different physical properties, making it impossible to adapt the same processes and reactors for production. Innovation and technical improvements have enabled progress to be made with the various models applying the tray technique or the deep-layer technique.
