2.1 Presentation of the toxin
Okadaic acid (figure 2 ) is a phycotoxin produced by dinoflagellates, notably of the genus Dinophysis . This toxin is ingested by filter-feeding bivalves, such as mussels and oysters, without affecting their smell, appearance or taste. The human senses are therefore of no use in assessing the toxicity of these foods. When contaminated seafood is consumed, gastrointestinal problems may occur.
