3. Handcrafted value-added from date palm fibers and fruit

In addition to the production of dates for human consumption, date palms offer a wide range of by-products used by the Saharan population.

  • Date by-products :

    • honey, juice, vinegar, alcohol and yeast, date flour used in bread-making;

    • After roasting, date stones can be used as a coffee substitute, producing a decoction with a pleasant flavor and aroma. But it is mainly used in livestock feed.

  • By-product of date palm :

    • legmi: very sweet juice that flows from the top of the palm tree and is a popular beverage, either fresh or fermented (wine);

    • dry palms, used as fences, windbreaks, decorative elements, in the manufacture of baskets, hats, dishes and...
