The baker's yeast Saccharomyces cerevisiae was chosen as the biological model because :
its intensive use in the agri-food and biotechnology sectors;
its identification as a potential source of contamination in many food products;
its definition as a target micro-organism in European regulations on surface hygiene;
its high resistance to biocides, which is further enhanced by prior adhesion to stainless steel;
and its ability to adhere to different substrates and form biofilms.
